Good Lenten Meal Good Lenten Meal
Number of Servings: 4

Ingredients

    1 tbs butter
    2 tbs flour
    1/4 c chopped green or sweet red pepper
    2 tbs chopped scallions
    2 c milk (skim or 2%)
    1- 6 oz can solid white tuna in water

Directions

Melt butter in large saucepan. Add chopped peppers and scallions and saute for 2-3 minutes. Add flour and combine. Stir in milk and cook over medium heat until mixture comes to a boil. Add flaked tuna. Heat and serve over whole grain toast, biscuits or mashed potatoes. Serves 4(1/2 c servings).

    I made this for dinner and it was great. Next time I'll add a little more flour of a little less milk to make it thicker. Yummmy - 8/7/09
