Introduction

These potatoes are wonderful and have no milk or butter. You can add garlic if you want during the last minute of cooking the onions. Ingredients

    7 medium potatoes, peeled and cut into quarters
    salt and pepper to taste
    3 onions, sliced
    7 tbsp olive oil, divided
    2 tbsp balsamic vinegar
    2 tbsp water


Directions

Boil the potatoes in a pot with just enough water to cover. Boil for about 40 minutes or until soft enough to mash. Drain, SAVING THE POTATO WATER. Put the potatoes back in the pot and cook for a few minutes until any remaining water evaporates. Add 4 tbsp olive oil to potatoes and mash. Add reserved potato water slowly while mashing until at desired consistency. Add salt and pepper to taste

While potatoes are cooking, heat a pan over medium high heat. Heat 3 tbsps olive oil (I used less) and add onions. Let onions sit for 5 minutes without stirring then stir and cook, stirring frequently, for about 15 minutes until caramelized. Add balsamic vinegar and water and cook, stirring, until reduced.

Add onions to potatoes and stir. Enjoy!
