Introduction
My slightly adapted version of Chickpea Salad II from AllRecipes.com. This is a great side for summer picnics, good to keep on hand as a general dinner side and it goes well on plain salad for a healthy lunch! Very all-purpose! Ingredients

1 (15 oz) can chickpeas, rinsed and drained
1 cucumber, peeled & diced
1 cup grape or cherry tomatoes, halved
1/2 red bell pepper, diced
1 tablespoon diced onion
1 tablespoon olive oil
1/4 teaspoon dried basil
1/2 teaspoon dried parsley
3 tablespoons balsamic vinegar
1 tablespoon grated parmesan cheese
salt (to taste)
Directions
1. Combine chickpeas, cucumber, tomatoes, pepper and onion in a large bowl.
2. Whisk or shake the oil, spices, vinegar and cheese. Toss with chickpea and vegetable mixture.
3. Salad is best after about an hour in the refrigerator.
