Introduction

Ingredients

    4 cups chopped tomato
    1-1/2 cup chopped cucumber-skin on
    1 cup choped red bell or yellow pepper
    1 cup sliced green onions
    1 cup chopped fresh parsley
    1/2 cup chopped radishes
    1/3 cup pitted kalamata olives (make sure not marinated in oil)
    1/4 cup fresh lemon juice
    2 tablespoons olive oil
    2 garlic cloves, minced
    1/2 teaspoon black pepper
    1/4 teaspoon salt
    1 package Saladena Goat Cheese Crumbles

Directions

1.Combine the first 7 ingredients in a large bowl.
2. Combine lemon juice, and next 4 ingredients in a small bowl and stir with a whisk. Pour dressing over salad and toss well. Serve immediately or cover and chill until ready to serve. This actually gets better if you let it sit in the fridge for a couple hours. It is very good!

This yields approximately 7 servings (serving size 1 cup).
