Introduction

I can't have wheat, so I made a substitute for bread crumbs using corn flakes and almonds. The almonds give it a nice, bread crumb-like consistency. I also can't have milk, so I used soy milk! Ingredients

    1 trout fillet
    Corn Flakes (enough to make about 1/3 cup ground)
    3-5 almonds
    1/2 cup soy milk
    1 tsp salt (or less!)
    1 tsp olive oil

Directions

Preheat oven to 350 degrees. Spray a baking sheet with non-stick cooking spray. Grind corn flakes and almonds in a food processor until they're finely ground. Mix the salt with the soy milk. Dip the trout fillet in the soy milk, then pat it with the corn flake mixture. Lay skin-side down on the baking sheet, and drizzle olive oil over the top. Bake for about 12-15 minutes, or until the fillet is all flakey.

Serve with some yummy steamed veggies and rice pilaf, and definitely drizzle some lemon juice over it!
