Ingredients
-
* 3/4 cup granulated sugar
* 1/4 cup granulated Splenda
* 3/4 cup all-purpose flour
* 1/2 cup unsweetened cocoa
* 1 egg white (Optional, though it IS figured into the nutritional information - the egg white helps give the brownies a cake-like texture. You can add another egg white if you like really cakey brownies, or omit them all together)
* 2 teaspoons cornstarch
* 1/4 teaspoon baking soda
* 1/4 teaspoon salt
* 2/3 cup non-fat vanilla yogurt (you may need an extra tablespoon or two)
* nonstick cooking spray
Directions
1. Preheat oven to 350°F.
2. Mix all dry ingredients.
3. Add yogurt (& egg white(s) if you choose) and mix well.
4. Batter will be very thick. If there are more dry ingredients that are not incorporating, add a few more tablespoons of yogurt.
5. Spray an 8x8 pan with nonstick cooking spray.
6. Spread batter in the pan evenly.
7. Bake for 30-35 minutes (I check the center of them at 25 minutes with a toothpick, and continue to check at 2-3 minute intervals until the toothpick comes out with a few smidges of brownie).
8. Remove and cool.
9. Dip a knife in warm water and cut into 9 even squares.
