Ingredients

    SALAD:
    1 red bell pepper (diced)
    1 yellow bell pepper (diced)
    1 green bell pepper (diced)
    1 red onion (diced)
    2.5 cups of cooked lentils (cooked and cooled)

    DRESSING:
    2 Tbsp dijon mustard
    1/2 cup red wine vinegar
    2 Tbsp sugar (or sugar substitute)

Directions

Simply dice all three peppers into small squares, place in mixing bowl. Dice red onion, add to bowl.

Add 2.5 cups of pre-cooked lentils (Trader Joe's makes a great box of lentils, find it in the refridgerated section...I use the whole box).

In a separate container, mix mustard, red wine vinegar and sugar. Mix thoroughly. This is the dressing.

Once dressing is combined, pour over the mixture of peppers, lentils and onion. Mix until everything is coated.

I like to serve this on top of arugula for a little extra bite, but can be put on any greens or served alone. If this is the main meal, I add a slice of goat cheese for some extra protein and a nice mild flavor.

Makes 6 servings (generous 1/2 cup per serving)

    Prepared as instructed. Served as a side dish. Was not impressed. Might be better over brown rice with some feta sprinkled on top. - 8/4/09

    I made this recipe since I had all the ingredients at my house. I took the suggestion of not using any sweetner and still loved it. Next time I make this, I might add more vegetables. - 6/24/09

    I really liked this. I eliminated the sugar and didn't even use a substitute and thought it tasted great. I ate it with a serving of whole grain brown rice so that I could make two incomplete proteins a complete one! - 5/11/09
