Introduction

Easy way to whip up a seafood curry. Any paste can be used, and a seafood mix can be replaced with prawns, shrimp, crab, calimari, fillets, or any other single fish or mixture you want, If coconut flavoured light evaporated milk cannot be obtained, just add a few drops of coconut essence to an ordinary can of fat reduced evaporated milk Easy way to whip up a seafood curry. Ingredients

    Cooking spray
    Small onion, finely chopped
    250 g of seafood
    Low fat curry paste (less than 4% fat content)
    0.25 cup of coconut flavoured evaporated milk

Directions

Spray a non-stick pan with cooking spray and saute onion until softened.
Add curry paste and stir until thoroughly mixed with the onion. Add a little water if the mixture gets too dry.
Add seafood and gently stir for a minute. Add coconut flavoured evaporated milk and simmer till seafood is cooked, about 2 - 3 minutes

    Incredible!
    Very nice will make this again. So pleased some one else uses coconut flavoured ev\aporated milk. 98% fat free so all the taste without the calories. You must try this. - 8/12/09
