Introduction

Ingredients

    spash sesame oil
    1 T shoyu (soy sauce)
    1/2 T Mirin (rice wine)
    1/2 t sambal
    1 t garlic powder
    1 t ground ginger
    1 t cumin
    1 T olive oil
    1 block nigari tofu

    1 red pepper
    2 carrots
    3 stalks celery
    1/2 onion
    3 cloves garlic
    4 oz portabello mushrooms
    3/4 c. shelled edamame
    Additional:
    spash sesame oil
    1 T shoyu (soy sauce)
    1/2 T Mirin (rice wine)
    1/2 t sambal
    1 t garlic powder
    1 t ground ginger
    1 t cumin
    1 T olive oil

Directions

Quicker than it looks, because you're working in the kitchen with joyful ingredients!
Mix first 8 ingredients in a bowl. Chop tofu into small bite size pieces and add to bowl, toss to coat. Preheat oven to 350. Toss tofu occasionally while oven warms. Prepare cookie sheet with 1 T olive oil. Bake marinated tofu for about a total of 30 minutes, turning frequently so it doesn't stick.
Chop all veggies. Add to heated, oiled pan. Add seasonings. Cook to desired color and texture.
Shell edamame. When tofu comes out of oven, place in a bowl, and place edamame on baking sheet. Roast in oven for 10 minutes.
Combine all ingredients. Makes about 3 2-cup servings.
