Introduction

A baked rice pudding made with brown/wild rice mixture, dried apricots, walnuts and a little white wine.

I used part half and half because I had it in the house ... it would lower the calories if I used just 1% milk.

Ingredients

    5 eggs from pastured chicken
    6c Lundberg Wild Blend Brown Rice- cooked
    1c Half and Half Cream
    1c Milk, 1%
    1/4c Walnuts, pieces or chips
    20 halves Apricots, dried,
    1/2 c Granulated Sugar
    2oz White Wine
    1/4tsp Salt

    Boiling water

Directions

beat the eggs with the sugar, salt and white wine.
Add the walnuts, snip the apricots and add.
Add the cooked rice mixture.

I use a deep uncovered casserole to bake it in. It will be cooked faster but with not as nice a texture.

Put the casserole in a larger oven safe pan. Put in oven and add boiling water to the depth of the rice pudding (if you can if not as deep as you can.)

Bake until knife inserted half way between the edge and the center comes out clean. The center will finish cooking as the pudding cools.

Bake in 350 oven in a pan
