Ingredients
-
3/4 cup frozen berry-blend fruit
2 tablespoons sugar-free red raspberry preserves
1 carton (6 oz.) fat-free, sugar-free yogurt (Weight Watchers brand or equivalent), lemon or key lime flavor
Directions
Place frozen fruit and preserves in a 2-cup or larger microwaveable bowl. Cover with a lid or plastic wrap or waxed paper. Microwave on high for 2 to 3 minutes, until very hot and bubbly. Remove from microwave, remove cover, and allow to cool slightly. Spoon in the yogurt, but do not stir to blend it - just let it melt a little. The yogurt will quickly cool the fruit to a safe temperature for eating. What are you waiting for?!?
Try different flavor combinations of fruits and yogurts. For instance: Peaches plus raspberry preserves & yogurt should make a nice Peach Melba.
I used: 1- Hy-Vee store brand "Cherry Berry Blend" fruit, containing blackberries, strawberries, blueberries, dark and red cherries, and red raspberries. 2- Smucker's SF red raspberry preserves. 3- Hy-Vee store brand Lite Yogurt, lemon flavor; 80 calories, 2 grams fiber, sweetened with Splenda. By my calculations it should count as 2 weight watchers points. Your NI/point values will vary, depending on what brands or styles of fruit, preserves, and yogurts you have on hand.
