Ingredients

Trader Joe's Harvest Grain Blend, 1.25 cup (half of bag uncooked)
Bush's, Black Beans, 1 cup (after drained and rinsed)
Black eyed peas, canned, 1 cup (after drained and rinsed)
Kraft Zesty Italian Salad Dressing, 12 tbsp
1 Green Pepper, diced
1 Red Pepper, diced
1 Yellow Bell Pepper, diced
1.5 cup chopped tomatoes (or sliced grape tomatoes)
3 -4 Tb raw Cilantro
Trader Joes Frozen White Corn, 1.5 cup
Salt, .5 tsp (or less to taste)
Scallions, raw, 3 medium (sliced including whites)
Onions, raw, .75 cup, chopped
1 tsp. Olive Oil
Black Pepper to taste
Directions
Toast the frozen corn on a frying pan (with no oil) until it thaws and gets slightly browned (this will bring out more sweetness!)
Cook the Grains according to package (except use 1 tsp of olive oil instead of 1 Tb butter) then let them cool.
Chop up the cilantro, tomatoes, peppers.
Add everything together, add black pepper to taste and let sit overnight (the overnight part is REALLY important...it doesn't taste great the first day because the flavors have to blend together.)
Serve chilled or at room temp ( I have 12 servings, but it makes a really big bowl of salad and can serve more than that. We also sometimes eat as a main dish because it is packed with protein and fiber!)
