Ingredients

For the Steak:
11/4 lb ground chuck
1/4 c chopped fresh parsley
2 T chopped scallions
1 t kosher salt
1/2 t fresh ground pepper
2 T all purpose flour
For the sauce:
1 T Olive Oil
2 c onions, sliced
1 t sugar
1T minced garlic
1 T tomato paste
2 c beef broth
1/4 c dry red wine
3/4 t kosher salt
1/2 t dried thyme leaves
For Cheesy Toasts:
4 whole wheat hamburger buns
2 T unsalted butter
pinch of paprika
1 T grated Parmesan cheese
1/2 t garlic
Directions
Combine the chuck, parsley, scallions, salt, and pepper in a small bowl. Dredge in 1 T flour. Sear on med. high heat in a heavy skillet, about 3 minutes on both sides. Remove from skillet and set aside.
Reduce skillet with a dash of red wine. Sautee onions and sugar in olive oil in the same skillet for about 5 minutes or until tender. Add garlic and tomato paste until paste is brown. Add beef broth and wine. Cook for 2 minutes. Add steaks back to the skillet. Cover and bring to a boil. Add remaining salt and thyme leaves.
Serve on cheesy toasts with a parmesan cheese and fresh parsley garnish.
For Cheesy toasts:
Heat oven to 400. Combine paprika and garlic with softened butter. Spread butter on each half of hamburger buns, then sprinkle with cheese. Toast until cheese is firm.
