Use any green herb in replace of the basil if you wish.

Ingredients

    1 cup (1 oz) chopped Italian parsley
    2/3 cup (6 oz) soft (silken) tofu
    1/3 cup coarsely chopped fresh chives, or 2 tsp dried chives
    2 garlic cloves, coarsely chopped
    1/4 cup (1 oz) grated Parmesan cheese
    1/4 teaspoon salt

Directions

In a blender of food processor, combine all ingredients, scraping the side of the bowl once or twice, until sauce is smooth and pale green.

Serve immediately, or refrigerate up to two days. It also freezes well!
