Ingredients

    1/2 cup chicken broth
    1/2 tbsp capers
    3/4 tsp cornstarch
    1/2 tsp minced garlic
    1/2 tsp grated lemon zest
    1 tbsp lemon juice
    dash salt and pepper
    1/2 tbsp butter
    8oz scallops, patted dry
    1/2 tbsp chopped parsley

Directions

-1- In a 2-cup liquid measure, stir broth, capers, cornstarch, garlic, zest, juice, salt and pepper until cornstarch dissolves.

-2- Melt the butter in a nonstick skillet over medium high heat. When butter just starts to brown, add scallops and cook, turning once, 4-5 minutes until golden and cooked through.
Remove and plate.

-3- Add broth mixture to skillet, bring to a boil. boil 1 minute until slightly thickened. Remove from heat, stir in parsley. Spoon over scallops.

When I eat seafood I am the only one in the family that eats it, so this recipe certainly can be doubled.

    Good
    The sauce needs more flavor and is "too" lemony. I used a pinch of dried dill & dried salad herbs and honey to boost the flavor a bit. - 4/29/08
