Introduction

This 3-bean salad is perfect as either a side-dish or a snack. Or, even as a main mean - it's seriously that good. This 3-bean salad is perfect as either a side-dish or a snack. Or, even as a main mean - it's seriously that good.
Number of Servings: 6

Ingredients

    -1 can black beans
    -1 can great northern beans
    -1 can red kidney beans
    -2 stalks celery
    -Handful of baby carrots (about 3 oz.)
    -1 white onion, peeled
    -1/4 c. balsamic vinegar
    -1/4 c. extra virgin olive oil
    -Salt and pepper, to taste

Directions

-Put all of the beans in a colander and rinse well to remove brine. Once drained, put in mixing bowl (which can double as serving dish).

-Cut the ends off the onion, peel it, and cut in half. Place in food processor and process to a fine dice. Dump results into mixing bowl.

-Do the same for the celery and carrots: If needed, cut into small enough pieces to fit into food processor, process into fine dice, then dump into mixing bowl.

-Add remaining ingredients, and mix well.

-Voila! Enjoy your delicious three-bean salad.

Makes 6 1-cup servings.
