Number of Servings: 2

Ingredients

    * 1 can pinto beans, rinsed
    * 1 medium onion, chopped
    * pinch black pepper
    * 1 tsp chili powder (or to taste)
    * 1 tsp curry powder
    * 1 tsp oregano
    * 1 1/2 tsp olive oil

Directions

Rinse the beans, unless you like 'em real salty.

Add the olive oil to a pan over medium high heat. When hot, add the onion. Brown the onion. Add the spices, lower the heat to medium, cook until fragrant. Add the rinsed beans, then 1/2 cup water. Cook down until the liquid is gravy-like.

This made two servings for me. Serve over cooked rice. (Serves 2)

    Very Good
    Very tasted! I used cumin instead of curry and dried pintos that I had soaked and cooked. I also added some green peppers when I was cooking the onions. I will add this to my recipe box and make again and again. Thanks for sharing! - 4/11/11
