Introduction

This is a quick & wonderful recipe given to me by a great friend. The batter makes 6 dozen small muffins & keeps well up to 6 weeks in the fridge -- so you can bake a few or many, as you like. The muffins are actually better after the batter has aged a week or so.
Nutritional Info is based on Canola Oil & Post Raisin Bran.
For variety, I add one very ripe mashed banana to one dozen muffins -- yummy banana muffins!

Ingredients

    1 box Raisin Bran (15 oz)
    3 cups sugar
    5 cups flour
    5 tsp baking soda
    2 tsp salt
    4 eggs, beaten
    1 cup oil
    1 qt buttermilk

Directions

Mix cereal, sugar, flour, soda & salt in very large bowl (one with a cover is best). Add eggs, oil & buttermilk. Fill small (not mini) muffin tins 2/3 full. Bake approx. 15 min, 450 degree oven.

Makes 6 dozen small muffins.
