Introduction

Ingredients

8 oz uncoked bow tie pasta
1/3 cup fresh orange juice (I will use .25 cup)
1/4 cup fresh lemon juice
1 TBLS prepared mustard
2 tsp splenda
1 1/4 tsp salt
1 tsp black pepper
1 1/2 tsp rice vinegar/ cider vinegar
2 cups shredded chicken breast (grilled)
1 1/2 cups red seedless grapes (halved)
1 cup thin diagonally cut celery
1/3 cup finely chopped red onion
3 TBLS chopped fresh chives
2 TBLS chopped fresh parsley
1 TBLS EVOO
Directions
1. Cook the pasta aldente, rinse with cool water, drain well.
2. In a bowl combine juice thru vinegar
3. Add cooked pasta, chicken, grapes, celery, onlion, parsley & chives
4. Refrigerate for 2 hours before serving to blend flavors.
Makes 3 full servings - I plan to split this into 3 servings & serve two for dinner and save the other for lunch. You can always switch it up according to your calorie needs.
We will eat this as a meal, served over a bed of romaine lettuce.
