Introduction

Ingredients

    1 lb lean ground beef
    1 small onion chopped
    2 cloves garlic diced
    1 small green pepper chopped
    1 small red pepper chopped
    (both peppers should equal 1 cup chopped)
    1 medium zucchini shredded
    1 tomato chopped
    2 tsp cumin
    2 tsp chili
    1 tsp paprika
    salt and pepper to taste

Directions

Heat a little oil in a sautee pan.

Sweat onions and garlic in pan until fragrant, then add the beef. Add seasonings to the beef and cook through.

Add peppers and zucchini to meat mixture and cook until soft. When the veggies are cooked, stir in the tomatoes.

Makes 5 cups
