Ingredients
2 cups rice (follow instructions on package)
1 package firm tofu
1 large carrot, sliced
1/2 green bell pepper, sliced
1/4 cup frozen chopped onion
Soy Sauce ( or Teriyaki for a thicker and sweeter sauce )
Vegetable Oil
For a more complex flavor, add in 1/2 teaspoon ground ginger during the sauteing process. :)
Directions
When I was vegetarian I would always make sauteed tofu/veggies with rice.
All you have to do is by firm tofu, cut it up into squares, and blot out some of the moistness and slice your veggies into long strips. (of course, take out the inside of the pepper and peel the carrots.
After that, heat up a skillet with a few tablespoons of oil. Make sure the oil is heated up enough to sizzle when the tofu is added and add the tofu squares and saute until lightly brown and/or more firm. Then add some more oil if you need it and add in your sliced veggies and saute until they start to caramelize.
Let the pan cool for a minute (it will be hot) and then add in the soy sauce to taste (if you add it in before the pan has cooled then the soy sauce will just burn. A great alternative to the soy sauce would be teriyaki sauce if you like something a little more thick and sweet. Either way, this is a beautiful dish with lots of good flavors.
Serve over rice! It's delicioso!
