Introduction

Basic salmon loaf, when you want the tastiness of salmon cakes without the cooking hassle. This is my own lower-fat/cholesterol adaptation of a salmon loaf recipe from the Oklahoma Master Gardeners' cookbook. It's rich in B vitamins and calcium. Ingredients

    2 14-oz. cans salmon, including liquid
    1/2 c. egg substitute
    1-1/2 c. bread crumbs
    1/4 c. chopped onion (or 2 T. minced dried onion)
    1 T. no-salt garlic or seafood seasoning
    1/4 c. lemon juice

Directions

1. Preheat oven to 350­ degrees.

2. Reserve liquid from canned salmon. Flake salmon in large bowl. Add liquid, egg subsitute, onions,lemon juice, seasoning, and bread crumbs. Mix thoroughly.

3. Turn mixture into loaf pan sprayed with non-stick spray and bake for one hour. Makes 10 servings.

Serving suggestion: serve with roasted vegetables sprinkled with garlic vinegar.
