Introduction
This dinner is great when you dont want to have to worry over dinner, you can get just throw it together in the crock pot and forget about it until dinner time ;) This dinner is great when you dont want to have to worry over dinner, you can get just throw it together in the crock pot and forget about it until dinner time ;)Number of Servings: 6
Ingredients

* 1.5 lb chicken thigh
*1 cup chopped onions
*1/2 cup green bell pepper
*2 cups chopped carrots
*3-4 small/medium chopped potatos
*3 cloves chopped garlic
*1 package of refrigerated buttermilk buscuits
Directions
Around lunch time (or about 4-5 hours before dinner), add all of the ingredients together in your crock pot, excluding the biscuits. Season to your liking. I usually add a chicken bullion cube, a teaspoon or so pepper, and a teaspoon or so garlic powder with a dash of chili powder. Fill pot with water , until water line is about an inch above the ingredients.
The great thing about this recipe is that you can start it whenever you have the time earlier in the day, for example, I started mine today at 10 am. I just let it cook and fill the house with yummy smells to make everyone hungry ;)
So cook for a good 5 hours. About an hour to 1 and a half hours before you plan on serving dinner, add the buttermilk biscuits, for quick and easy dumplings you can use the refrigerated biscuits (you can also create your own from Bisquick). I remove biscuits from package and break them into pieces, then drop into the soup.(this would also be the time you could de-bone chicken if you used chicken with bones.)
This recipe we only use one package of biscuits, for more dumplings you can add another package of biscuits.
Cook for an hour or so, until the biscuits are cooked thoroughly and are gooey on the outside, but flaky (bread like) on the inside.
I always turn off the crock pot and let it cool about 20 minutes before I serve it up and enjoy :)
