Introduction

Ingredients

1 small pkg lemon sugar free jello
1/2 packet of unflavored gelatin
2 lemons for zest and juice
1/4 cup water
1 8 oz pkg nonfat cream cheese
3 Yoplait Light Vanilla Yogurts
1 cup Cool Whip Lite
1 can crushed Dole Pineapple in 100% juice, unsweetened
1 scoop of Pina Colada Protein Drink Mix (I used Secure brand)
Directions
Makes 8 servings
Zest lemons and save to use later.
Get a small saucepan and put the 1/4 cup of water and add the juice from the 2 lemons that you just zested. Add the 1/2 packet of unflavored gelatin and the box of lemon jello and stir until dissolved, let set for 2 minutes. Place saucepan on med heat and stir constantly for about 2 minutes, remove and let cool for about 2 minutes.
In mixing bowl, put cream cheese and cream it using hand mixer. Add the 3 yogurts and mix until well blended. Add protein powder, pineapple and lemon zest and blend again.
Once the jello mixture has cooled add it to the cream cheese mixture and mix one more time. Fold in the cool whip and pour equal amounts into 8 dessert dishes and place in refrigerator. Let cool for at least 6 hours.
