Ingredients

    * Cauliflower, raw, 1 head, large (6-7" dia)
    * Butter, unsalted, .75 stick
    * Heavy Whipping Cream, 1 cup, fluid (yields 2 cups whipped)
    * Garlic, 18 cloves
    * Fresh Chives, 3 tbsp chopped

Directions

Serving Size: Makes about 10 1/2 cup servings

Preheat the over to 400 degrees. Cut off top 1/3 of heads of garlic, wrap each in foil and drizzle with olive oil, sprinkle with salt and pepper. Bake for 45 minutes or until soft.

Meanwhile: Chop cauliflower into pieces.

Cover with water and boil until tender. Drain, return to pot.

Add butter and cream. Using an immersion blender (or even a masher) puree until desired texture. Season with salt and pepper. Fold in chives.
