    2 cupLight cheddar cheese
    fresh broccoli -2 bunches
    1 package uncle bens long grain and wild rice -
    2 cans Campbells 1/2 the fat cram of chicken soup
    ** also good if you add a layer of cubed chicken breasts


Cook rice according to package directions - use 1 whole package ( about 2 cups )
cook broccoli until crunchy
Mix 2 cans of soup with 1.5 cups of cheese
alternate soup mixture with broccoli and rice in layers
Sprinkle with remaining 1/2 cup of cheese.
Bake at 350 for 1 hour
serves 8

    I lowered the salt by not using canned soup and makng a simple roux with butter, flour and a little milk. ALso left out the cheese and added a little onion and grated carrot.

    This was great!!! Even the 2 y.o. just LOVED it!!! Easy to make and has many possibilities for adding different veggies, etc. Will be adding this to my recipe book. Can't believe the lower calorie count compared to the wonderful taste...very filling too! Thank you for sharing!!!! - 4/24/07
