Ingredients

    2 cups cooked brown rice
    1 cup shredded cheddar cheese
    1/2 cup egg substitute or two whole eggs
    1 package frozen chopped spinach, thawed and squeezed dry
    5 tbl. wheat germ
    5 tbl. grated romano cheese
    2 tbl. margarine or oil

Directions

Preheat oven to 350 degrees.

In a large bowl mix cooked rice, spinach, cheese and egg substitute until well combined. Spray a 8x8 baking dish with non-stick spray. Add spinach rice mixture and press slightly. In a separate small bowl, combine wheat germ, romano cheese, and melted margarine. Spinkle wheat germ mixture over casserole and bake for 30 minutes.
Slice into 8 pieces for a side dish, 4 for a main course size.

    Can also add milk (excellent use for SOUR milk!) & can lower/omit amount of cheddar &/eggs. Also can make this in microwave, about 10-15 min (depending on alts). Can mix it all* in a souffle pan/something with VERY high sides, at least twice as high as mix.
    *Only'nuke'wheat germ mix in last few min

    Made this as the recipe says and it was a bit dry. I will try some other things to moisten it up next time. The flavor is good. - 7/13/09
