Ingredients

    1 lb. of imitation crab meat,diced
    1 cucumber seeded and diced in squares
    1/2 of a medium onion, diced
    2 medium tomatoes, seeded and diced
    3 Tbls finely diced cilantro (or to your taste)
    Salt to your taste
    Juice of one lime
    1 small can of V-8 Vegetable juice

Directions

makes 12 1/3 cup servings
Put all ingredients in a medium size bowl and stir together. This is best if it is refrigerated for a while so the flavors can marry. The neighbors serve it to us on a crisp corn tortilla, but we have also eaten it on a bed of fresh spinach which makes it less fattening and still tastes quite good.
