Introduction

Number of Servings: 4

Ingredients

    * Beef liver, 500 g raw
    * Plain flour, 3 Tbs
    * Onions, raw, 2 cup, chopped (from 2 large onions)
    * Butter, unsalted, 15 grams, divided
    * Olive Oil, 1 tbsp
    * Worcestershire Sauce, 1 tsp
    * Water, 0.5-1 cup
    * Salt, pepper and oregano to taste

Directions

Wash liver thoroughly, peel off and discard the membrane and refuse, and pat dry. Cut it into 1 cm slices. Add oregano to taste (I use 1/2 tsp).
Put the flour in a shallow bowl, and sprinkle with salt and pepper. Dust the liver with the seasoned flour and shake off excess.
Heat half the butter and the oil in a frying pan and cook the onion over medium heat for 3 minutes, or until golden. Remove the onion from the pan and set aside.
Add the liver to the pan and cook over high heat for 1 minute on each side, or until lightly browned. Return the onion to the pan, and add the water and worcestershire sauce. Stir until the mixture boils and thickens slightly. Reduce the heat and simmer for another 3 minutes. (OR cook a little longer, if you prefer.)
Serve warm.
