Ingredients

    1/2 lb Green Beans, fresh
    1 1/2 - 2 c shelled Horticultural Beans (fresh, not dried)
    1 Seedless Cucumber
    1/2 c Red Onion, finely minced
    1/3 c fresh lemon juice
    1/3 c extra-virgin olive oil
    1/2 t kosher salt
    1/4 t freshly ground black pepper
    1 small can sliced mushrooms (this is my own addition)

Directions

Prepare ice bath. Bring large pot of salted water to a boil. Trim green beans & cut into 1/2-inch pieces. Add green beans to boiling water & cook 1 1/2 - 3 minutes. Scoop out green beans & place in ice bath. Return water to boil & cook horticultural beans, checking for doneness after 10 minutes, then every 5 minutes until tender. Remove green beans while cooking other beans and pat dry. Refresh ice bath and shock horticultural beans when done. Cool & drain. Slice cucumber lengthwise then in thin half-moons. Toss both beans, cucumbers, mushrooms, & minced onions. Whisk together lemon juice, oil, salt & pepper. Pour vinaigrette with salad & toss to coat well.
Serves 6-8.
