Ingredients


    * Bacon, 300 grams
    * Onions, raw, 2 medium (2-1/2" dia)
    * Feta Cheese, 180 grams
    * Green Peppers (bell peppers), 1 cup, strips
    * Egg, fresh, 12 large
    * Heavy Whipping Cream, 2 tbsp
    * Butter, unsalted, 2 tbsp

Directions

250g diced bacon, 1 cup diced capsicum, 1 diced onion, 180g diced fetta cheese. Saute together until onion is done, then spoon into mini muffin tray. Combine 12 eggs and 1/4 cup cream, and pour over filling. Bake in 180°C oven until set completely and browned a little. Makes a good 36 mini muffins. These are for my students during our end-of-term party. What, you thought I'd feed them chips and chocolate? Pffft...

    There is no way you can make 36 servings on this reciepe that will mean less than 30 grams per serving - 6/25/09

    That's 36 mini muffins. It's a snack food. At best, a side dish. I like to have a couple for breakfast. Knowing the nutrition info per muffin is more helpful. Sheesh.
