Introduction

This is a recipe my sister in law taught me. Native to the south Texas area. Super easy, super filling. Traditionally it you toast the pasta (like Ricearoni) after browning ground beef, then put everything in the pot. It could be from 4-8 servings, depending on how hungry you are. Ingredients

    * *Turkey, ground turkey breast 99% fat free, 16 oz
    * *Mexican Cut Fideo (fine), 14 oz or 1lb vermicelli broken into small pieces
    * *Crushed Tomatoes, 2 cup (1 can)
    * Onions, raw, 1 large
    * Celery, raw, 1 cup, diced
    * Green Peppers (bell peppers), 1 cup, chopped
    * Beans, pinto, 3 cups (2 cans)
    1 TBS minced garlic
    1 tsp cumin
    1.5 tsp chili powder
    1 tsp oregano
    2 tbs lemon or lime juice

Directions

Brown ground turkey. Add in onion and cook till translucent. Add garlic and spices. Cook till aromatic. Add in peppers, celery and cook till soft, then add tomatoes and 1 can of water. Add pintos. Bring to a simmer and cook till pasta is done, approx. 10 minutes.

Great sprinkled with cheese, sour cream and quacamole, though it is not calculated in the nutrition info.

    The original doesn't have beans, but it ups both the fiber and protein, and stretches the servings. Good eats!
