Introduction

Ingredients

    2.75 cups whole wheat flour
    .25 cup soy flour
    .25 masa harina
    1 tbsp. olive oil
    1/2 tbsp. salt
    1/2 tbsp. evaporated palm sugar
    2 tsp. dry active yeast
    1 cup warm (about 105 degree F) water

Directions

*Dissolve the yeast in the water and sprinkle on the evaporated palm sugar. Let this sit for 5-10 minutes or until the yeast is foamy.
*Add in the flour, salt, and olive oil and mix well to combine.
*Turn the dough out onto a lightly floured surface and knead for at least 10 minutes.
*Roll the dough into a ball, spray it with olive oil cooking spray and put it in a clean bowl in a warm place to rise for at least 2 hours.
*Punch the dough down and it is ready to use.

Makes approximately 1.75 lbs. of pizza dough.

    You don't need the sugar, and it's better to use fresh yeast. - 7/26/09
