Introduction

Number of Servings: 20

Ingredients

    4 cans fat free/reduced sodium Beef Broth
    2 med onions, diced
    3 carrots, diced
    1.5 cup barley-Quaker quick cooking
    .5 cups green beans
    1 large can 24 oz, diced tomatoes
    8 cups water
    1 lb ground turkey (93% fat free)
    1 tsp oregano
    1 tsp basil
    1/2 tsp ground mustard
    1 tsp pepper

Directions

1) dice vegetables and cook in dutch oven in 1 tbsp butter (optional) until tender. Cook ground turkey in separate pan until brown, drain fat.
2) add beef broth, water,seasonings bring to boil, reduce to simmer
3) add barley, tomatoes, cooked ground turkey
4) boil and simmer 20 mins to cook barley

Makes 20 (1 cup) servings.
