Introduction

One of my Childhood favorites. Ground Beef Tacos with Potatoes.

Subsitutuions & Additions: (not listed under foods, so would need to add to your daily meal plan)
Cheese, Taco Seasoning - Use your favorite., Flour Tortilas, Cilantro, Sour Cream, Onions, Shredded Carrots

Number of Servings: 8

Ingredients

    1lb Ground beef
    1 Large Potato, Diced, very small pieces
    1 Cup of Diced Red Ripe Tomatoes
    1.5 Cups Shredded Iceberg Lettuce
    1 cup Refried Beans
    Lawry's Taco Seasoning or your favorite taco seasoning, to taste.

Directions

brown the ground beef & Drain extra fat off.
add in the the diced potatoes in the skillet,
add about a cup of water to cover beef & water,
add taco seasonings to taste and bring to a boil and let simmer till the water has reduced and potatoes are tender. (add more water if the potatoes aren't cooked well enough)

Heat Beans, and serve with tortillas that have been heated either on the stove or in a microwave between a towel.

Add Cheese and other toppings if desired.
