Introduction

I'm not sure this can technically be called chili, since I didn't actually put any spices in it.
With the 7 cloves of garlic and one whole large onion, I didn't think it needed anything else, but you can feel free to add your own chili seasoning.

This cooks up thick and hearty. It's very filling, and has 22% of your daily iron, for under 225 calories per serving.

Ingredients

    1 cup dry quinoa
    1 can red kidney beans
    1 can black beans
    1 can white canellini beans
    1 can pinto beans
    1 large can crushed tomatoes
    7 cloves garlic
    1 large raw onion, diced
    2 Tbsp Olive oil
    1 cube rapunzel vegan bouillion
    2 cups water

Directions

Heat olive oil in a large pot.

Add onions and cook until they begin to turn translucent.

Add garlic and cook until garlic is golden.

Add water, bring to boil, and add bouillion.

Add remaining ingredients and keep at a low boil for 30 minutes, stirring often, until quinoa is fully cooked. Add more water/broth if needed.

Makes 12 servings, just under a cup each.

    This was really easy to make, but I added some additional flavoring - 1 tsp chili powder, 1/4 tsp red pepper flakes, salt and pepper to taste. - 8/18/09

    It was quite good, but a couple of family members said it was bland. We ended up adding a little chili powder to some and Parmesan cheese to others. - 8/4/09
