Introduction

Ingredients

1 whole egg
2 egg whites
30g onions
3 medium mushrooms
Handful spinach
30g peas
1 tbsp salsa
Low-cal oil spray
Recipe is still yummy if you vary the vegetables and quantities to whatever you fancy!
Directions
Makes 1 omlette
-Defrost peas (unless using fresh) and heat in small pan.
-Dice the onion and slice mushrooms and fry in oil spray until onion is caramelized.
-Meanwhile, beat eggs and add pepper and herbs of your choice (oregano is yummy!)
-Add spinach to pan and cook until wilted then add salsa.
-Pour the egg mixture over the pan and cook until set.
You can also add any kind of cheese, grated or otherwise to the top then stick the pan in the grill.
