Ingredients

170g (1.5 cup) Dried Bellflower Root (DoRaJi), pre-sliced
0.5 Cucumber
2.5 tbsp Red Pepper Powder (Chili Powder)
3 tbsp Sugar
3 tbsp Rice Vinegar (or Apple Vinegar)
0.5 tbsp Garlic, minced
1 tbsp Scallions (Green Onions), chopped
0.5 tsp Salt
1 tsp Sesame Oil
0.5 tbsp Sesame Seeds, white, dry-roasted
Directions
Soak about a handful of bellflower roots in water at least over night to rid the bitter taste. Wash several times before use.
Slice cucumber in half, cut in diagonal slices.
Mix together bellflower roots, cucumber, chili powder, sugar, vinegar, minced garlic, finely chopped green onions, salt, and sesame seeds.
Add sesame oil, mix well.
Makes 8 servings.
