This recipe was given to me by a nutritionist. I used low/no salt products. It was such a surprise. It was so good. Ingredients

2 Tbs, olive oil
1 large onion, chopped
1 cup sliced or diced carrots
1 cup chopped celery with leaves
3 crushed garlic cloves
8 cups fat-free, reduced sodium chicken broth
2 cups dried yellow lentils
4 tsps. ground cumin
2 bay leaves
2 tbs. tomato paste
1 cup chopped parsley
2 tbs. lemon juice
1 (14 1/2 oz) can diced tomatoes
Directions
In a large pot, heat oil over medium heat. Saute onions, carrots, celery and garlic until soft, about 5 minutes. Add broth, lentils, cumin, bay leaves and paste. Bring to a boil. Reduce hear; simmer until lentils are soft, 30 to 40 minutes. Add tomatoes during the last 10 minutes.
Add parsley, lemon juice, simmer 2 minutes. If using dried parsley, put in sooner. Serve in bowls.
