Introduction

Ingredients

1 cup Rotini Pasta
1 medium Zucchini, quartered lengthwise and cut into 1/4" wedges
3/4 cup crumbled feta cheese
2 tablespoons fresh oregano leaves or 2 tsps dried
4 tsps extra virgin olive oil
1 large chicken breast
2 tablespoons light Italian Salad dressing
Directions
1. Marinate the chicken breast in the Italian dressing.
2. Cook the pasta according to the package directions. Drain and place in a serving bowl. Keep warm
3. Grill the chicken until cooked through - George Forman grill about 7 minutes.
4. Microwave the zucchini with 2 tablespoons of water for about 2 minutes on high - just until it starts loosing the white color. Drain and add to the pasta
5 Toss into the pasta the Feta Cheese, Oregano and olive oil until well mixed
6. Chop up the cooked chicken into cubes and add to the pasta
