Ingredients

    2 cans black beans rinsed and drained
    1 can tomatoes minced
    1 ripe red tomato diced
    3 teaspoons minced garlic
    1 jalapeno chopped and seeded 1 cup carrots
    3/4 cup celery
    1 1/4 cup onions
    1 small diced red pepper
    1 cup carrots
    1 cup v8 juice
    1 roast red pepper
    1 tbsp grape seed oil

    Sweat vegetables,in grapeseed oil, add beans, tomatoes and juice, bring to a boil, reduce heat to low and cook 30 minutes. Top with Cilantro and serve
