Ingredients

9 lasagna noodles (abougt 8 oz)
1 TB fennel seeds
8 oz ground beef
1 onion chopped
red bell pepper chopped
1 zucchini
30 oz jar marinara sauce
1.5 c. nonfat ricotta cheese.
1/2 cup grated parmesan or parmesan/romano
Directions
Heat large skillet-- cook beef, onion, bell pepper and zucchini. Cook until beef browns.
Stir in marinara sauce and fennel-- along w/ about half a jar of additional water. (Extra water in the recipe means no need to pre-cook the noodles!)
Preheat oven to 375. Spread 1/4 of meat mixture in 9x13" pan. Top w/ 3 noodles, spread w/ 1/2 cup of ricotta. Repeat layering twice, ending w/ meat.
Cover w/ foil and bake 50 minutes. Remove foil, sprinkle w/ mparmesan, and bake until heated through & cheeses are browned-- about 20 minutes. Let stand 10 min before serving.
