Ingredients

    1 cup quinoa, rinsed, and drained
    3 cups mushrooms, whole
    3 cups grape tomatoes, whole
    2 baby eggplants, salted, drained and rinsed
    2 yellow peppers, cut in quarters
    1 poblano pepper, halved and seeded
    1 onion, quartered
    Hot Chili Sauce
    Soy Sauce

Directions

Cook the quinoa according to package instructions. Skewer the mushrooms, tomatoes, eggplants, and onions on metal skewers. Grill the veggies on a hot grill. Serve the veggies over 1/2 cup of quinoa. Add Hot Chili Sauce and soy sauce to taste.
