Ingredients

    Peanut Oil, 2 tbsp
    Onions, raw, 1 small finely chopped
    Cauliflower, raw, .5 head, medium (5-6" dia) cut into flowerets
    Brown Lentils, 400 grams (1 can) rinsed
    White Rice, long grain, 250 grams
    vegie stock -3 cups
    cinnamon quill
    two bay leaves
    mild curry paste, 2 tbsp

Directions

heat oil in a medium pan

fry onion for five mins then add cauliflower and rice and cook, stirring for two minutes.

Add curry paste and stir for a further minute

Add stock, bay leaves and cinnamon quill and bring to boil

reduce heat to low, cover and cook for 15 mins, or until rice is cooked and all the liquid is absorbed

fluff rice with fork and add lentils

serve with chopped coriander and chutney.
