Introduction

Low fat, high fiber, non dairy, low salt Muffins. Salt can be omitted. 1/14 c of skim milk can be substituted for the soy milk and any berry may be used(I have tried cranberries, raisins and blueberries all good). Ingredients

    1 c Fiber One Cereal
    1 c Oatmeal
    1 c Flour whole wheat
    1/4 c Applesauce or 1 egg white
    1/4 c Honey
    1/4 - 1/2 Tsp Salt
    1 1/2 Tsp Baking powder
    1/2 soy milk with 1 c water to make 1 1/4 C's of liquid
    1 c Berries
    1Tbsp or to your taste (opt)

Directions

Preheat oven to 400 degrees. Combine liquids and pour over combined Fiber One cereal and Oatmeal. Let sit until liquid is absorbed. Just a few minutes.
Blend flour and baking powder and cinnamon.
Add berries, and blended flour to cereal mixture. Scoop into muffin tins, (use paper cups or spray a nonstick pan).
Bake for 25 minutes
Serves 12
