Introduction
This is NOT the way to make it with canned clams and clam juice, but this is what I had to work with this time. It should be made with FRESH quahogs, 1 1/2 Qts. of them or more to taste with their juices. The sodium content will then be greatly reduced!! Also, reduce the milk crackers to 3 ozs. You can reduce the salt pork to 4 ozs. too!! I made this for someone who insisted on the recipe as above and when I then came to calculate, I was mortified by the fat and sodium.
