Introduction

Ingredients

    4 cups of frozen spinach (it does not need to be thawed, but it does need to loose enough that you can stir it into you mixture)
    2 cups of cottage cheese
    2 large eggs
    Italian seasoning
    1 1/2 cups of grated cheese
    9 uncooked lasagna noodles

Directions

Preheat oven to 450 degrees.

In a large mixing bowl, mix together the cottage cheese, spinach, 2 eggs, Italian seasoning, and 1 cup of grated cheese. Set aside.

In a glass 2 quart baking dish, layer a small amount of the pasta sauce until the bottom of the dish is just covered.
Then layer 3 uncooked lasagna noodles side by side to cover the sauce.
Take half the cottage cheese mixture now, and spread evenly on top of the noodles.
Add another thin layer of sauce to cover the mixture.
Now add another 3 noodles to the top of the sauce.
Take the other half of the cottage cheese mixture and spread evenly across the noodles.
Add another layer of sauce to cover the mixture and add another 3 noodles.
Add the last of the pasta sauce on top.

Now take a cup of HOT water and pour it around the edges of the pasta, careful not to wash the sauce away.


I like to put tin foil across the top of the dish to keep the noodles from drying out.

Put in the oven and bake for one hour.
In the last 10 minutes, before it's finished, take out the lasagna and add the last 1/2 cup of cheese to the top. Place back in the over and finish baking.

Take out of the oven, let cool, and enjoy!

    This was easy to make and tasted really good. I love lasagna but always felt like it was too much of project to make. But I love this recipe. I'll definitly make this again. - 7/27/09

    I like cottage cheese and spinach and I will try making this. I am not actually a vegitarian but I am definately going to start incorporating some of these meals into my weekly diet to see how they taste ...I might just convert! - 7/31/09
