Introduction

Ingredients

2 cups fresh broccoli crowns, chopped
1 cup water
dash garlic salt (or just salt) and pepper to taste
Directions
Remove most of the stalk from the broccoli, then chop. You will need about two cups of dark green broccoli crowns.
Bring 1 cup of water to a boil in a medium saucepan with a lid. Add broccoli and garlic salt and/or pepper. Cover immediately. Steam for about 2-5 minutes, until broccoli is tender but still has it's color. (Don't overcook)
Transfer the water and broccoli to a blender (Vita-mix works best). Pulse on medium (5-6) until the broccoli is well broken up, then blend from medium to high until smooth (about 30 seconds in a Vita-mix, a minute or two in a blender).
Pour in a bowl or cup. Optional: garnish with grated cheese of choice and serve with crackers. Enjoy!
