Ingredients

-1 1/2 Cups All Purpose Flour
-1/2 Cup Whole Wheat Flour
-1 Cup Quick Oats (dry)
-1/2 Cup Steel Cut Oats plus 1/2 cup Water
-1/2 Cup Splenda
-1/2 Cup Brown Sugar (Packed)
-2 t Baking Soda
-2 1/2 t Baking Powder
-2 1/2 t Ground Cinnamon
-1/2 t Ground Nutmeg
-1 t Salt
-1 T Cooking Oil
-4 Medium Size Eggs
-1 Cup Cinnamon Applesauce
-2 1/4 Cup Mashed Bananas
Directions
-Combine steel cut oats and 1/2 cup water. Microwave oats and water for 30 seconds. Stir and continue cooking in microwave for an additional 30 seconds. Set aside.
-Combine all dry ingredients in large bowl and mix
-Add eggs (slightly beaten), oil, bananas, steel cut oats and applesauce
-Stir until mixed thoroughly
-Grease muffin tins and fill 3/4 full
-Bake 30 minutes at 350 deg.
-Recipe makes 23 yummy muffins
