Introduction

Number of Servings: 3

Ingredients

    2 Tbsp olive oil
    3 Tbsp Balsamic Vinegar
    1/2 tsp oregano
    1/4 tsp crushed red pepper
    1/4 tsp salt

    One entire head of romatin lettuce, trimmed and chopped
    two cups of baby spinach
    1/2 green bell pepper
    1 green onion
    1/2 pack of Tuna Creations Garlic & Herb (I make a tuna sandwich for my son with the rest)
    1/4 cup shredded part skim mozzarella cheese
    Small handful of baby carrots (I snap them in half)

Directions

Combine first set of ingredients for dressing in bottom of large bowl into an emulsion. This was more than enough dressing and you could cut it in half and still dress this salad well.

Layer in the romaine lettuce and baby spinach into the bowl and give this an initial toss

Slice the green pepper finely and the green onion and place into bowl

Snap your baby carrots in half and throw those in

Toss well until the salad is coated in dressing. Then add in the cheese and tuna when you serve.

This should make three entree sized salads. Makes a filling lunch but may need more tuna or additional protein for dinner. Enjoy!

    Very Good
    I have been making this for lunch almost every day! I vary it by using white or black beans depending on what I have on hand. It's very delicious and filling. - 2/28/11
